Anchors Away Ale – American (Steam) Ale All Grain Recipe

Grain Bill
• 9lb Briess Pale Ale Malt
• 14oz Briess Caramel 80L Malt

Hops
• 1oz Northern Brewer, 8%AA, pellet, 60min
• .5oz Northern Brewer, 8%AA, pellet, 15min
• .5oz Northern Brewer, 8%AA, pellet, 1min

Yeast
• Wyeast 1332 Northern Ale 65-71F tolerance

Brew
A. 8-3/4 Gallons Total Water Needed
B. 3-1/2 Gallons Strike Water @166-168 degrees
 Heat 8-3/4 Gallons to 166-168 degrees
C. Add 3-1/2 gallons of water into mash tun (cooler)
 Check temp in mash tun till reaching 163 degrees
D. Mix grain into the water stirring the grains in with the water
 Mix thoroughly
E. Close lid and mash at desired temperature of 150-154F for 60 mins.
F. While grain is mashing in the mash tun, heat remaning water to 170 degrees
G. After 60 minutes, drain slowly into pitcher to catch cloudy runnings
 Continue to slowly drain and catch the initial runnings until clear
H. Check remaining water temperature and bring to 170 degrees
I. Sparge Water needed 5-1/4 Gallons @170 degrees
 Slowly spray sparge and continue to collect runnings
J. While sparging, ready the ice for the cooling container
K. Collect 6-1/2 Gallons for 60 min boil
L. Start burner and put pot on – bring to boil
M. Once wort is boiling, add 1oz Northern Brewer Hops – watch boil-over
N. After 45 minutes, add another .5oz of hops
O. After 14 more minutes add the last .5oz of hops
P. After 60 mins. place pot in cooling container – add water and more ice
Q. Chill to below 80F – preferably 75 degrees
R. Add to fermenter and aerate vigorously
S. Pitch yeast
T. Airlock
U. Keep fermentation at 68F or below
V. Initial fermentation 3 days to 1 week
W. Rack to secondary and leave for 2 more weeks
X. Bottle with 1.25 cups of malt extract or 5 ozs. Corn sugar
Y. Allow to bottle condition for another 2 weeks
