Single Infusion Mash Temperature Reference

  • 155-158 degrees F                          Alpha-Amylase                             Higher percentage of non-fermentables –  lighter bodied drier, clean tasting beer
  • 140—149 degrees F                       Beta-Amylase                             Higher percentage of fermentables – fuller bodied, sweet beer

Many brewers use a temperature of 154 degrees F. for a preferred mash temperature which gives a nice balance of body and fermentability that works well for American and English style ales.

Mash out with 165-167 degrees F sparge water
