Cassoulet -Casserole Recipe from the South of France

This recipe originating from the south of France, is a combination of beans, smoked sausage, and vegetables that takes no special ingredients and tastes delicious!

Ingredients:

  • 1 tablespoon vegetable oil
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 2 cloves garlic, chopped
  • ½ pound smoked sausage, sliced
  • 1 15-oz can of rinsed and dried kidney beans
  • 1 15-oz can of rinsed and dried white kidney beans (or Navy beans)
  • 2 bay leaves
  • 1 14.5-oz can of diced tomatoes
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley

When you begin, heat the oil in a large skillet, add the carrots, celery, onion and garlic, then cook and stir for a few minutes until your onion is transparent. Next, add the sausage into the skillet and cook through until the meat has turned a golden brown.

Add the beans and tomatoes, and use the bay leaves, thyme, salt and pepper as seasonings. Cover the top of the pan and simmer for approximately 10 minutes, stirring occasionally.

Once everything is fully simmered, remove the bay leaves. Pair with a fresh salad and bread.

Honey Spiced Cajun Chicken

Serves 2

– 2 pounded chicken breasts
– Tony Charcheres Cajun Seasoning
– 3 sliced mushrooms
– 1 diced tomato
– 2 Tbl mustard
– 4 Tsp. honey
– 3 oz cream
– Cooked linguini (for 2 people)

1. Pound boned (or boneless) chicken breast to 1/2 inch
2. Pat the chicken in the seasonings and grill until done.
3. Slice chicken in thin (1/4 inch) slices
4. Put chicken slices back in pan with a little oil, the diced tomato and mushrooms for 2 minutes.
5. Add the honey, mustard and cream.
6. Cook for 5 minutes at medium heat. toss in cooked linguini.

 

Shrimp Etouffe

INGREDIENTS:

1/2 stick butter unsalted
1/4 teaspoon salt
1 medium onions chopped
1/4 teaspoon black pepper
1/2 celery rib finely chopped
1 pinch cayenne pepper
2 garlic cloves minced
1 pounds medium shrimp, shelled & deveined
3/4 teaspoons jalapeño pepper minced
2 scallions chopped
1 tablespoons all-purpose flour
1/4 cup parsley chopped
1 7 ounce can Italian chopped tomatoes juices reserved
1-1/2 cups rice cooked
1/2 tablespoon sweet paprika

DIRECTIONS:

1. In a heavy non-reactive 14 inch skillet, melt the butter
2. Add the onions and celery and cook over moderate heat until translucent, about 5 minutes.
3. Add garlic and jalapeño and cook for 2 minutes
4. Add flour and cook, stirring constantly, for 5 minutes.
5. Stir in tomatoes and their juice, the paprika, salt, black pepper and cayenne
6. Bring to a simmer, cover and cook for 5 minutes.
7. Add shrimp and stir until they curl and turn pink, 2-3 minutes.
8. Stir in the scallions and parsley and serve over cooked rice.

Breadcrumb Parmesan Flounder

Ingredients

  • 4 flounder fillets
  • 1/4 cup butter, melted – divided
  • 1 cup panko bread crumbs
  • 2/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • ground black pepper to taste
  • 1 pinch dried thyme

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking dish.
  2. Arrange flounder fillets on prepared baking dish and brush with 1 tablespoon butter. Combine remaining 3 tablespoons butter with bread crumbs, Parmesan cheese, salt, pepper, and thyme in a bowl; sprinkle over flounder.
  3. Bake in preheated oven until fish flakes easily with a fork, 15 to 20 minutes. Carefully transfer fillets to a plate with a spatula.

Mushroom Bolognese

Ingredients

  • 1/2 ounce dried porcini mushrooms
  • 1 cup boiling water
  • 1 tablespoon olive oil
  • 2 1/2 cups chopped onion
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1/2 pound ground pork
  • 8 cups finely chopped cremini mushrooms (about 1 1/2 pounds)
  • 1 tablespoon minced garlic
  • 2 tablespoons tomato paste
  • 1/2 cup white wine
  • 1 (14-ounce) can whole peeled tomatoes, undrained
  • 1/4 cup whole milk
  • 10 ounces uncooked whole-wheat spaghetti
  • 1 tablespoon kosher salt
  • 1 1/2 ounces Parmigiano-Reggiano cheese, grated
  • 1/4 cup chopped fresh parsley

Preparation

1. Combine porcini and boiling water in a bowl; cover and let stand 20 minutes or until soft. Drain porcini in a colander lined with a paper towel over a bowl, reserving liquid. Rinse and chop porcini.

2. Heat olive oil in a Dutch oven over medium-high heat. Add onion, 1/2 teaspoon salt, 1/4 teaspoon pepper, and pork; cook 10 minutes or until pork is browned, stirring to crumble pork. Add cremini mushrooms, garlic, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper; cook 15 minutes or until liquid almost evaporates, stirring occasionally. Add porcini; cook 1 minute. Add tomato paste; cook 2 minutes, stirring constantly. Add reserved porcini liquid and wine; cook 1 minute, scraping pan to loosen browned bits. Add tomatoes; bring to a boil. Reduce heat; simmer 30 minutes, stirring occasionally and breaking up tomatoes as necessary. Stir in milk; cook 2 minutes.

3. Cook pasta according to package directions, adding 1 tablespoon salt to cooking water. Drain. Toss pasta with sauce; top with cheese and parsley.

Shrimp Fra Diavolo

Ingredients

  • 8 ounces uncooked linguine
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 1/2 tablespoons minced garlic, divided
  • 1 pound medium shrimp, peeled and deveined
  • 3/4 cup diced onion
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh lemon juice
  • 1 3/4 cups canned crushed tomatoes
  • 1/4 teaspoon salt
  • 1 (14.5-ounce) can diced tomatoes, drained

Preparation

1. Cook pasta according to package directions, omitting salt and fat. Drain; keep warm.

2. While pasta cooks, heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add 1 1/2 teaspoons garlic and shrimp; sauté or 3 minutes or until shrimp are done. Remove from pan; keep warm.

3. Add remaining 1 tablespoon oil and onion to pan; sauté 5 minutes or until softened. Stir in remaining 1 tablespoon garlic, pepper, basil, and oregano; cook 1 minute, stirring constantly. Stir in tomato paste and lemon juice; cook 1 minute or until slightly darkened. Stir in crushed tomatoes, salt, and diced tomatoes; cook 5 minutes or until thickened. Return shrimp to pan; cook for 2 minutes or until thoroughly heated. Serve over pasta.

Pecan Crusted Fish Recipe

Ingredients

  • 4 (5 -6 ounce) fish fillets
  • 1⁄4 cup buttermilk
  • 1⁄4 cup pecans (finely ground in food processor or chop finely with knife)
  • 3⁄4 cup breadcrumbs
  • 3 garlic cloves (minced or pressed)
  • 2 tablespoons fresh parsley (minced)
  • 1⁄2 teaspoon dried thyme
  • 1⁄2 teaspoon paprika
  • 1⁄2 teaspoon salt
  • 1 pinch cayenne

DIRECTIONS

  1. Preheat the oven to 375°F; lightly oil a baking pan.
  2. Rinse the fish and place it in a shallow dish.
  3. Pour the buttermilk over the fillets.
    In a separate shallow dish, combine the pecans, bread crumbs, garlic, parsley, thyme, paprika, salt, and cayenne.
  4. One at a time, remove the fillets from the buttermilk, allowing the excess to drain off.
  5. Dredge in the pecan mixture to coat all sides.
  6. Place each coated fillet in the baking pan.
  7. Bake for 30 to 45 minutes, depending upon the thickness of the fillets, until the topping is lightly browned and the fish is tender and flakes easily with a fork.

Stir Fry Chicken With Broccoli Recipe

Ingredients

Ground black pepper and salt according to taste
2 sliced green onions
½ cup of sliced onion
3 cups of broccoli florets
2 tablespoons of divided vegetable oil
1 teaspoon of sambal oelek
2 tablespoons of oyster sauce
3 tablespoons of dry sherry
3 tablespoons of soy sauce
½ teaspoon of fresh and minced ginger root
1 teaspoon of minced garlic
2 teaspoons of dry sherry
2 teaspoons of soy sauce
1 tablespoon of cornstarch
2 tablespoons of vegetable oil
2 boneless, skinless, and sliced halves if chicken breast

Directions

  • Mix together ginger, garlic, 2 tablespoons of sherry, 2 teaspoons of soy sauce, cornstarch, and 2 tablespoons of vegetable oil in a bowl.
  • In another bowl, whisk together sambal oelek, oyster sauce, 3 tablespoons of sherry, and 3 tablespoons of soy sauce.
  • Take a skillet or wok and heat a tablespoon of vegetable oil using medium high heat.
  • Stir and cook the chicken in batches until they have become golden. This may take around 5 minutes.
  • Transfer the chicken to a platter.
  • Heat the remainder tablespoon of vegetable oil in the same skillet or wok and stir and cook onion and broccoli in it. This should be done for around 2 to 3 minutes until the broccoli is cooked partially but still remains firm.
  • Stir in the mixture of oyster sauce and continue to cook for about 5 minutes until the broccoli has become tender.
  • Return the chicken to your wok and add in the green onions.
  • Toss these until properly heated and coated thoroughly with sauce.
  • Season this using black pepper and salt.

Smoky Chipotle Black Beans and Rice

Ingredients

1 cup Rice
2 tablespoon Extra Virgin Olive Oil
1 pound Sausage (about 4 links), casings removed
1 medium Onion, diced
2 ribs Celery, thinly sliced
2 cloves Garlic, minced
1 tablespoon Chipotle Seasoning* (see below)
1/3 cup white wine
1 jar black bean chili starter
1 can black beans, drained and rinsed

Preparation

Serves 4-6

  • Heat a large, deep skillet or dutch oven over medium high heat.
  • Add Extra Virgin Olive Oil.
  • When the oil shimmers, add sausage, breaking it up with a wooden spoon.
  • Cook until the meat is no longer pink and the juices run clear. Using a slotted spoon, remove the cooked sausage to a paper towel-lined plate.
  1. In the same skillet, add onion, celery, garlic, and chipotle seasoning.
  2. Cook until translucent and fragrant, about 3-5 minutes.
  3. Remove the skillet from the heat and add white wine (optional) to the pan, scraping any browned bits from the bottom of the pan with a wooden spoon.
  4. Return the skillet to the head and add the black bean chili Starter, black beans, and the reserved cooked sausage. Stir to combine and bring to a boil. Turn off the heat and serve over the prepared rice.

 

*Chipotle Seasoning Ingredients (makes about 8 measures for this recipe)

1 tablespoon ground chipotle chile pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground coriander
2 teaspoons paprika (smoked paprika if available)
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon oregano (Mexican Oregano if available)
½ teaspoon seasoned salt
½ teaspoon cayenne pepper

Kow Steak

Ingredients:

• 1-1/4 pounds Steak (ribeye or skirt steak)
• Cooking Oil
• 1 medium onion, diced (about 1 cup)
1/2 pound snow peas, trimmed
4 Baby Bok Choy or cabbage sliced
1 (8 ounce) can Bamboo Shoots, drained
2 cloves minced fresh Garlic
1 cup Beef Broth
3 tablespoons light Soy Sauce
1/2 teaspoon toasted Sesame Oil
1/2 teaspoon Sugar
1/2 teaspoon Kosher Salt
1/4 teaspoon White Pepper
2 tablespoons cornstarch
2 tablespoons cold water

Directions:

• Slice steak in half (if using skirt steak) and place on a parchment paper lined sheet pan and freeze for 20-25 minutes.
• Prep vegetables, drain bamboo shoots
• In a medium bowl combine, garlic, broth, tamari, sesame oil, sugar, salt and white pepper, whisk to combine
• Remove steak to a cutting board. Angle knife and slice 1/4 inch thick slices of steak
• Preheat wok to medium-high to high heat
• Add in 1 teaspoon of oil and add onions and pea pods
• Cook until onions have softened and the pea pods turn a bright green. About 4 minutes
• Transfer to a clean bowl
• Add another teaspoon of oil to the wok
• Once hot add in the sliced bok choy or cabbage
• Cook, stirring often until the greens wilt but the white parts still have a bit of crunch to them (about 3 minutes)
• Transfer to the bowl with the other vegetables
• Heat 1 tablespoon of oil in wok
• Work in slices of steak searing the it on both sides
• Pour in the broth liquids, toss to combine and immediately bring to a boil
• Mix in cornstarch solution and pour in the slurry
• Stir in the vegetables
• Cook until heated through and the sauce has slightly thickened
• Serve with white rice or rice noodles and top with sliced green onions, more white pepper and any favorite hot sauce.
